Whenever there’s a potluck picnic, I bring Grandma Marilyn’s Summer Cabbage Salad. It’s sort of a variation on coleslaw, but you don’t have to worry about mayonnaise getting warm. I almost always double the recipe. Grandma says the secret is to get the “crunchies” nice and brown. Enjoy!
Grandma Marilyn’s Summer Cabbage Salad
1 bag of shredded cabbage
4 or 5 green onions sliced (I use less because we’re not crazy about raw onions)
Mix in a jar:
1/2 cup salad oil
2 TBSP. soy sauce
1/4 cup vinegar
1/2 cup brown sugar
flavor packet from Ramen Oriental Noodle Soup
Shake often and then add to cabbage 1/2 hour before serving.
Crunchies:
1/2 stick butter
2 TBSP. sesame seeds
1/2 cup slivered almonds
1 package Ramen noodles (break up in the bag, but do it carefully so it doesn’t explode)
Saute until brown and then add to salad just before serving.
That looks delicious. I like anything crunchy so I’ll be trying this recipe out. Thank you!
Stephanie, you can chop up your own cabbage, too, if you don’t have access to a bag of preshredded coleslaw mix (do they have that in France?). But if you do that, you might want to add some shredded carrots for color.
